For too long, the non-alcoholic option at parties has been an afterthought — sparkling water with a lime wedge, or a glass of orange juice handed over with an apologetic shrug. That era is over. With the right techniques and ingredients, mocktails can be just as sophisticated, complex, and enjoyable as their alcoholic counterparts.
The key is treating them with the same care and intention you'd give any cocktail. Fresh juice, house-made syrups, layered flavours, and proper garnishes make all the difference.
1. Spiced Ginger Citrus Fizz
Warming, bright, and refreshing all at once — this is a crowd-pleaser for any season.
- 60ml fresh ginger juice (or strong ginger beer)
- 30ml fresh lemon juice
- 20ml honey syrup (1:1 honey and warm water)
- Top with sparkling water
- Garnish: lemon wheel and fresh mint
Method: Combine ginger juice, lemon juice, and honey syrup in a shaker with ice. Shake briefly, strain into a highball glass over fresh ice, and top with sparkling water. Stir gently.

- 30ml fresh lime juice

Method: Muddle cucumber slices and mint in a shaker until the cucumber breaks down. Add lime juice, elderflower cordial, and ice. Shake well. Double strain into a tall glass over crushed ice. 5. Smoky Tomato Virgin Mary

- 120ml quality tomato juice
- 20ml fresh lemon juice
- 2 dashes Worcestershire sauce
- 2 dashes Tabasco (or to taste)
- Pinch of smoked paprika
- Pinch of celery salt
- Freshly cracked black pepper
- Garnish: celery stalk, lemon wedge, olive
Method: Combine all liquid ingredients in a mixing glass with ice. Roll the drink (pour between two vessels) rather than shaking — this chills and mixes without over-aerating. Pour into a tall glass over ice and add garnishes generously.
